Cake Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 ½ cups vegetable oil
- 1 ½ cups granulated sugar
- ½ cup brown sugar (packed)
- 2 teaspoons vanilla extract
- 3 large eggs
- 4 cups apples (peeled and chopped into ½-inch chunks)
Glaze Ingredients
- 1/3 cup butter
- 1/3 cup brown sugar (packed)
- 1/3 cup granulated sugar
- 1/3 cup heavy cream
- ½ teaspoon vanilla extract
Instructions
- Preheat and prepare pan. Preheat your oven to 325°F (163°C) and grease a 9×13-inch baking pan with non-stick cooking spray. Set it aside to be ready for the batter.
- Mix dry ingredients. In a medium mixing bowl, sift together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt. This ensures the spices and leavening agents are evenly distributed.
- Combine wet ingredients and sugars. Using an electric mixer on medium speed, beat the vegetable oil, granulated sugar, and brown sugar in a large mixing bowl until well combined. Then, add the vanilla extract and beat in the eggs one at a time to incorporate thoroughly.
- Add dry ingredients to wet mixture. Gradually add the sifted dry mixture into the wet ingredients a little at a time, mixing well after each addition. Note that the batter will be quite thick at this stage.
- Fold in apples. Using a sturdy wooden spoon, gently fold the peeled and chopped apples into the batter ensuring even distribution without over-mixing.
- Bake the cake. Spread the batter evenly in the prepared 9×13-inch baking pan. Bake at 325°F for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the glaze. While the cake is baking, add the butter, brown sugar, granulated sugar, heavy cream, and vanilla extract into a medium saucepan. Heat over medium heat, stirring frequently, until the mixture begins to simmer. Remove from heat and allow to cool for 5 minutes.
- Glaze the cake. Pour the warm glaze evenly over the cake while it is still warm to soak in and add a delicious, glossy finish.
- Slice and serve. After glazing, let the cake cool slightly, then slice into 12 even pieces and serve.
Notes
- You can substitute the vegetable oil with light olive oil or melted coconut oil for a different flavor.
- Make sure apples are peeled and cut into consistent ½-inch chunks for even texture and baking.
- The glaze should be poured while warm to absorb properly into the cake.
- This cake stores well covered at room temperature for up to 3 days.
- For a dairy-free version, substitute the butter and heavy cream in the glaze with plant-based alternatives.
