Instructions

  1. Preheat and prepare pan. Preheat your oven to 325°F (163°C) and grease a 9×13-inch baking pan with non-stick cooking spray. Set it aside to be ready for the batter.
  2. Mix dry ingredients. In a medium mixing bowl, sift together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt. This ensures the spices and leavening agents are evenly distributed.
  3. Combine wet ingredients and sugars. Using an electric mixer on medium speed, beat the vegetable oil, granulated sugar, and brown sugar in a large mixing bowl until well combined. Then, add the vanilla extract and beat in the eggs one at a time to incorporate thoroughly.
  4. Add dry ingredients to wet mixture. Gradually add the sifted dry mixture into the wet ingredients a little at a time, mixing well after each addition. Note that the batter will be quite thick at this stage.
