Instructions

  1. Cook the Bacon: Cook the bacon using your preferred method until the strips are crisp. Set them aside to cool completely. This ensures the bacon is firm enough to be handled and assembled with the pancake batter.
  2. Prepare Pancake Batter: Prepare the pancake mix according to the package instructions to yield batter for 16 pancakes. Make sure the batter is smooth and lump-free for even cooking.
  3. Cook Pancake Dippers: Heat a griddle or large skillet over medium heat. Pour a ladle of pancake batter onto the griddle, making a shape roughly the same width and length as one slice of bacon. Immediately lay one cooked bacon strip onto the pancake batter. Drizzle 1-2 teaspoons of additional pancake batter over the bacon strip partially, leaving some bacon exposed.
