Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Lightly grease or line a 12-cup muffin tin to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt. Stir until evenly mixed.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the unsweetened applesauce, maple syrup, milk, egg, vanilla extract, and melted coconut oil or butter until smooth and well incorporated.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry oat mixture. Stir gently but thoroughly until everything is well combined and the oats are fully coated.
  5. Fold in Apples: Gently fold the finely chopped apples into the oatmeal mixture, distributing them evenly throughout.
