  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic (minced)

  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt

For the Avocado Sauce:

  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro (chopped)
  • 1 small garlic clove
  • 1/4 teaspoon salt
  • 23 tablespoons water (to thin, as needed)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Salmon Meatballs: Pulse the salmon in a food processor, then mix with breadcrumbs, egg, garlic, onions, dill, lemon juice, lemon zest, salt, and pepper. Shape into meatballs and bake for 15–18 minutes.
  3. Make the Avocado Sauce: Blend avocado, yogurt, olive oil, lime juice, cilantro, garlic, and salt until smooth, adjusting consistency with water.
