For the Salmon Meatballs:
- 1 pound fresh salmon fillet (skin removed)
- 1/2 cup panko breadcrumbs
- 1 egg
- 2 cloves garlic (minced)
- 1/4 cup green onions (chopped)
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for brushing)
For the Avocado Sauce:
- 1 ripe avocado
- 1/4 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 tablespoon fresh cilantro (chopped)
- 1 small garlic clove
- 1/4 teaspoon salt
- 2–3 tablespoons water (to thin, as needed)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Salmon Meatballs: Pulse the salmon in a food processor, then mix with breadcrumbs, egg, garlic, onions, dill, lemon juice, lemon zest, salt, and pepper. Shape into meatballs and bake for 15–18 minutes.
- Make the Avocado Sauce: Blend avocado, yogurt, olive oil, lime juice, cilantro, garlic, and salt until smooth, adjusting consistency with water.
- Serve: Drizzle the warm meatballs with avocado sauce or serve the sauce on the side for dipping.
Notes
- These meatballs are also delicious served cold over a salad or tucked into a pita with greens.
- You can swap dill for parsley or basil depending on your taste preferences.
