BBQ Chicken:
- 1 pound boneless, skinless chicken breasts

- 1/2 teaspoon garlic powder
- 1 cup BBQ sauce (store-bought or homemade)
Additional Ingredients:
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or thawed from frozen)
- 1 avocado, diced
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
Instructions
- Preheat the oven: Preheat the oven to 425°F (218°C). Toss the sweet potato cubes with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25–30 minutes, flipping halfway, until tender and slightly crispy.
- Cook the chicken: Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper. Cook on a grill pan or skillet over medium heat for 6–7 minutes per side. Let rest for 5 minutes, then chop or shred. Toss with BBQ sauce.
- Assemble the bowls: In a large bowl or individual serving bowls, layer roasted sweet potatoes, BBQ chicken, black beans, corn, avocado, and red onion. Drizzle with lime juice and sprinkle with chopped cilantro before serving.
