- 2 14-ounce cans black beans, drained

- 2 cups water (divided)
Instructions
- Sauté Onions: Over medium-high heat, add oil and diced onion to a pan. Cook for about 3 minutes or until the onions begin to soften and become tender.
- Cook Quinoa: Add the quinoa and 1 cup of water to the pan with onions. Stir well, cover the pan, reduce heat to low, and let it cook gently for 10 minutes until quinoa is partially cooked and water is absorbed.
- Add Beans and Seasoning: Remove the cover and add the drained black beans, taco seasoning, and the remaining 1 cup of water. Increase heat to medium-high and stir occasionally. Cook for about 10 to 15 minutes until the mixture thickens, most of the liquid evaporates, and the mixture becomes saucy. Serve warm as filling for tacos.
