Blueberry Sauce
- ½ cup fresh blueberries

- 1 teaspoon freshly squeezed lemon juice
- ½ teaspoon vanilla extract
- Pinch of salt
Goat Cheese
- 8 ounces goat cheese log (cut into 6 pieces)
Instructions
- Make Blueberry Sauce: In a medium bowl, combine the blueberries and honey or your choice of sweetener. Microwave for 30 to 60 seconds until the blueberries start to expand and some burst. Using a slotted metal spoon or potato masher, mash the berries until a thick sauce forms. Stir in the freshly squeezed lemon juice, vanilla extract, and a pinch of salt. Place the sauce in the freezer for 15 to 20 minutes to cool completely.
- Mix Goat Cheese: Cut the goat cheese into 6 pieces and gently stir it into the cooled blueberry sauce. Mix just until combined, keeping some chunks of goat cheese intact for texture. If needed, return the mixture to the freezer for another 15 minutes to help it firm up.
- Form into Log: Lay two pieces of 15-inch plastic wrap on a flat surface in a plus sign shape. Place the blueberry goat cheese mixture in the center of the horizontal plastic wrap and shape it roughly into a log. Wrap the mixture tightly with the horizontal piece, then wrap again with the vertical piece, twisting the ends to seal the log and reinforce its shape.
- Refrigerate and Serve: Refrigerate the wrapped log for 2 to 4 hours to set, or freeze for 30 to 45 minutes for a quicker firming. Before serving, let it come back to room temperature. Slice and serve with crackers for an elegant appetizer experience.
