Description

A delicious and hearty Breakfast Club Sandwich featuring crispy smoked bacon, creamy avocado, fresh tomato, melted cheddar cheese, and perfectly cooked eggs layered between toasted whole grain bread slices with a spread of mayonnaise. This sandwich is perfect for a satisfying morning meal or brunch.

Ingredients

Scale

Bread & Spreads

  • 3 slices of whole grain bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon butter

Protein

  • 4 slices of smoked bacon
  • 2 large eggs
  • 2 slices of cheddar cheese

Vegetables & Garnishes

  • 1 ripe tomato, thinly sliced
  • 1 avocado, mashed
  • Fresh lettuce leaves
  • Salt and pepper to taste

Instructions

  1. Cook the Bacon: Begin by cooking the smoked bacon in a skillet over medium heat until it turns crispy. Once cooked, transfer the bacon to paper towels to drain excess fat and set it aside.
  2. Cook the Eggs: In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are fully set but yolks remain runny. For firmer yolks, flip the eggs gently and cook the other side.
  3. Toast the Bread: Toast the slices of whole grain bread until they reach a golden brown color, using either a toaster or an oven broiler.
  4. Spread Mayonnaise: Evenly spread mayonnaise on one side of each toasted bread slice to add moisture and flavor.
  5. First Layer Assembly: On the first slice of bread, mayonnaise side up, layer fresh lettuce leaves, followed by thinly sliced tomatoes and the crispy bacon slices.
  6. Second Bread Layer: Place the second slice of bread on top of the bacon layer, mayonnaise side down. Then spread the mashed avocado onto the top side of this slice.
  7. Add Eggs and Cheese: Carefully place the cooked eggs on the avocado spread and then top with slices of cheddar cheese.
  8. Top Sandwich: Complete the sandwich by adding the final slice of bread on top, mayonnaise side down. Press gently to help the layers stick together.
  9. Serve: Secure the assembled sandwich with toothpicks to hold it in place and slice it into halves or quarters for easy serving and eating.

Notes

  • For a firmer yolk, cook the eggs longer or flip them to cook over easy or over hard.
  • You can substitute cheddar cheese with your preferred cheese like Swiss or mozzarella.
  • Avocado can be seasoned lightly with salt and pepper to enhance flavor.
  • Whole grain bread provides extra fiber and nutrients, but white or sourdough bread can be used as alternatives.
  • Optionally, add hot sauce or mustard for extra zest.
