Description

For the Tortillas and Sauce

  • 4 8″ whole wheat tortillas
  • 1 cup pizza sauce

For the Eggs

  • 1 tbsp olive oil (for cooking)

For the Topping

  • 1 cup shredded mozzarella cheese


Instructions

  1. Spread pizza sauce: Spread 3-4 tablespoons of pizza sauce evenly onto each tortilla. Set the tortillas aside to prepare the eggs.
  2. Heat the skillet: Place a 10-inch nonstick skillet over medium-low heat and add enough olive oil to lightly coat the pan to prevent sticking.
  3. Prepare egg mixture: In a bowl, whisk together the eggs, optional milk, salt, and pepper until well combined for a smooth batter.
  4. Cook the omelet base: Pour a quarter of the egg mixture into the skillet, spreading it out evenly to form a thin omelet. Cook until mostly set but still slightly soft on top, ensuring it remains tender.
  5. Add toppings: Spoon 3-4 tablespoons of pizza sauce evenly on the cooked egg, then sprinkle 3-4 tablespoons of shredded mozzarella cheese over the sauce.
  6. Place tortilla on egg: Place a tortilla, sauce side down, carefully on top of the egg and toppings. Gently press to help the tortilla adhere to the egg and toppings.
  7. Cook with tortilla: Swirl the tortilla gently in the pan to ensure the egg finishes cooking and the tortilla sticks well. Slide the tortilla onto a plate or cutting board and flip it back into the pan, tortilla side down. Cook for an additional 30 seconds to seal everything together.
  8. Cool and roll: Remove the egg-topped tortilla onto a plate and let it cool slightly to handle. Roll it up with the tortilla side out to create a neat breakfast pizza roll. Repeat steps for all tortillas and serve warm.
