Description

This Breakfast Shepherd’s Pie is a hearty and comforting dish perfect for a family breakfast or brunch. Layers of lightly scrambled eggs, savory sausage gravy, shredded cheddar cheese, and crispy tater tots come together in a baked casserole that’s both flavorful and filling. With easy prep and bake steps, this recipe combines classic breakfast favorites into one satisfying pie.

Ingredients

Scale

Sausage and Gravy

  • 1 lb breakfast sausage (or plant-based substitute)
  • ¼ cup flour
  • 2 cups milk (for gravy)
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder (optional)

Egg Mixture

  • 6 eggs
  • ½ cup milk

Topping

  • 2 cups shredded cheddar cheese
  • 1 package (about 32 oz) frozen tater tots

Instructions

  1. Preheat Oven and Cook Sausage: Preheat your oven to 375°F (190°C). In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Remove the sausage from the skillet and set aside.
  2. Make the Gravy: In the same skillet with the sausage drippings, add the flour and stir continuously for about 1 minute to cook the flour. Gradually whisk in 2 cups of milk to create a smooth gravy. Season with salt, pepper, and garlic powder if using. Add the cooked sausage back into the gravy and stir to combine.
  3. Prepare Scrambled Eggs: In a bowl, whisk together 6 eggs and ½ cup milk. Lightly scramble the eggs in a separate greased pan over medium-low heat, cooking gently to avoid overcooking. The eggs should be soft and slightly underdone since they will bake further.
  4. Assemble the Pie: Grease a 9×13-inch baking dish. Layer the lightly scrambled eggs evenly on the bottom. Pour the sausage gravy mixture over the eggs evenly. Sprinkle the shredded cheddar cheese on top of the gravy layer. Finally, arrange the frozen tater tots in a single layer on top of the cheese.
  5. Bake: Place the assembled dish in the preheated oven and bake for 30–35 minutes or until the tater tots are golden brown and crispy on top.
  6. Rest and Serve: Let the breakfast shepherd’s pie rest for 5 minutes after baking to set. Serve warm and enjoy this comforting brunch classic!

Notes

  • You can swap regular breakfast sausage with a plant-based substitute to make the dish vegetarian.
  • For extra flavor, add herbs like thyme or rosemary to the gravy.
  • Make sure not to overcook the eggs before layering, as they will finish cooking in the oven.
  • Use a greased baking dish to prevent sticking and ease serving.
  • Leftovers can be refrigerated and reheated, but tater tots may lose crispness.
