These Cajun Chicken & Sweet Potato Bowls are a delicious and nutritious meal option that is perfect for meal prep. Tender roasted sweet potatoes, flavorful Cajun chicken, and an array of fresh toppings come together in a colorful bowl that is both satisfying and full of flavor.

Sweet Potatoes:

  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper

Cajun Chicken:

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Additional Ingredients:

  • 1 cup cooked brown rice or quinoa
  • 1 cup canned black beans, drained and rinsed
  • 1 avocado, sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Roast Sweet Potatoes: Toss sweet potatoes with 1 tablespoon of olive oil and seasonings. Roast for 25–30 minutes.
  3. Cook Cajun Chicken: Season chicken with Cajun seasoning and salt. Cook in a skillet until browned and cooked through.
  4. Assemble Bowls: Divide rice or quinoa into bowls. Top with sweet potatoes, Cajun chicken, black beans, avocado, tomatoes, and red onion. Garnish with cilantro and serve with lime wedges.

Notes
