Sweet Potatoes:
- 2 medium sweet potatoes, peeled and diced
- 2 tablespoons olive oil, divided
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder

- 1 teaspoon salt, divided
- ½ teaspoon black pepper
Cajun Chicken:
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- ½ teaspoon salt
Additional Ingredients:
- 1 cup cooked brown rice or quinoa
- 1 cup canned black beans, drained and rinsed
- 1 avocado, sliced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- Fresh cilantro for garnish (optional)
- Lime wedges for serving
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Roast Sweet Potatoes: Toss sweet potatoes with 1 tablespoon of olive oil and seasonings. Roast for 25–30 minutes.
- Cook Cajun Chicken: Season chicken with Cajun seasoning and salt. Cook in a skillet until browned and cooked through.
- Assemble Bowls: Divide rice or quinoa into bowls. Top with sweet potatoes, Cajun chicken, black beans, avocado, tomatoes, and red onion. Garnish with cilantro and serve with lime wedges.
Notes
- For extra heat, add a pinch of cayenne to the Cajun seasoning.
