These Caprese Pesto Tarts are a delightful twist on the classic Caprese salad, featuring flaky puff pastry topped with basil pesto, fresh mozzarella, cherry tomatoes, and a drizzle of balsamic glaze. Perfect for entertaining or as a special snack!

Puff Pastry:
- 1 sheet puff pastry, thawed
Basil Pesto:
- 1/3 cup basil pesto
Cherry Tomatoes:
- 1 cup cherry tomatoes, halved
Fresh Mozzarella:
- 8 oz fresh mozzarella, sliced or torn
Olive Oil:
- 1 tablespoon olive oil
Salt and Pepper:
- To taste
Balsamic Glaze:
- 1 tablespoon balsamic glaze (for drizzling)
Additional Garnish:
- Fresh basil leaves for garnish
Instructions
- Preheat and Prepare: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out the puff pastry sheet slightly on a floured surface and cut into 6 equal rectangles.
- Create Borders: Place the rectangles on the prepared baking sheet. Score a 1/2-inch border around the edges of each rectangle with a knife, being careful not to cut all the way through.
- Add Pesto and Toppings: Spread about 2 teaspoons of pesto inside the scored border of each tart. Top with sliced or torn mozzarella and cherry tomato halves, arranging evenly. Drizzle with olive oil and season with salt and pepper.
- Bake: Bake for 15–18 minutes, or until the puff pastry is golden and crisp.
- Finish and Serve: Remove from the oven, let cool slightly. Drizzle with balsamic glaze, and garnish with fresh basil before serving.
Notes
- You can use store-bought or homemade pesto.
- Try heirloom cherry tomatoes for a colorful variation.
- Best served warm or at room temperature.
