Instructions

  1. Prepare Cauliflower: Steam or boil cauliflower florets until fork-tender, then cool slightly and chop into smaller pieces to form the base of the fritter mixture.
  2. Mix Ingredients: In a mixing bowl, combine the chopped cauliflower, eggs, all-purpose flour, grated Parmesan cheese, minced garlic, salt, black pepper, and chopped fresh parsley or dill. Mix well to form a batter-like consistency.
  3. Form Patties: Shape the mixture into small patties. If the mixture is too loose, adjust the consistency by adding more flour or an extra egg as needed to hold the patties together.
  4. Heat Oil: Pour vegetable or canola oil into a skillet to a depth of about 1/4 inch and heat over medium heat until hot but not smoking.
  5. Cook Fritters: Fry the patties in the hot oil for 3 to 4 minutes on each side until they turn golden brown and crispy on the outside. Work in batches to avoid overcrowding the pan.
