Cauliflower:
- 1 medium head of cauliflower, cut into florets
Other Ingredients:
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons cream cheese
- 1/4 cup whole milk (or as needed)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh chives (optional, for garnish)
Instructions
- Boil Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10–12 minutes, or until very tender.
- Drain and Blend: Drain well and let sit for a few minutes to release excess moisture. In a large food processor or using an immersion blender, combine the cauliflower, butter, garlic, Parmesan, cream cheese, milk, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.
- Adjust and Serve: Taste and adjust seasoning or milk for desired texture. Transfer to a serving bowl and garnish with chopped chives if desired. Serve warm.
Notes
- For a dairy-free version, use olive oil instead of butter and omit the cheese or use dairy-free alternatives.
- If you prefer a chunkier texture, mash by hand instead of using a food processor.
