Description

A comforting and easy Cheesy Potato & Ground Beef Crockpot Casserole featuring frozen Potatoes O’Brien, seasoned ground beef, Velveeta cheese, and shredded cheddar cheese, slow-cooked to melty perfection. Perfect for a hands-off hearty dinner that serves 6 to 8 people.

Ingredients

Scale

Meat

  • 1 lb ground beef, browned

Vegetables & Frozen

  • 1 bag (about 28 oz) frozen Potatoes O’Brien (with onions and peppers)

Seasonings & Cheese

  • 1 packet taco or chili seasoning
  • 1 small block Velveeta cheese, cubed (approximately 8 oz)
  • 1 cup shredded cheese (cheddar or your favorite blend)

Instructions

  1. Brown the Ground Beef: In a skillet over medium heat, cook the ground beef until it is fully browned and no longer pink. Drain any excess fat to keep the casserole from becoming greasy.
  2. Add Ingredients to Crockpot: Transfer the browned ground beef to the crockpot. Add the frozen Potatoes O’Brien, the seasoning packet, Velveeta cheese cubes, and the shredded cheese on top.
  3. Combine Ingredients: Gently stir all the ingredients in the crockpot to evenly distribute the beef, potatoes, seasoning, and cheeses.
  4. Cook Slowly: Cover the crockpot and cook on low heat for 4 hours, allowing the casserole to become hot, bubbly, and the cheese to fully melt and blend into the dish.
  5. Stir and Serve: Before serving, give the casserole a thorough stir to mix all flavors and textures evenly for the best taste and consistency.

Notes

  • You can substitute Velveeta cheese with another melty cheese if preferred, but Velveeta provides a creamy texture.
  • For a spicier casserole, add diced jalapeños or extra chili seasoning.
  • Make sure to brown and drain the beef well to prevent excess grease in the final dish.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated thoroughly.
  • This recipe can easily be doubled for larger gatherings if needed.
