- 3 cups cooked chicken breast (shredded or cubed)
- 1 can (14.5 oz) diced tomatoes with basil, garlic, and oregano (drained)
- 1/2 cup balsamic vinaigrette dressing
- 2 cloves garlic (minced)
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded mozzarella cheese
For Topping:
- 1 box (6 oz) seasoned stuffing mix
- 1/4 cup water
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Prepare Chicken Mixture: In a bowl, mix chicken, tomatoes, balsamic vinaigrette, garlic, basil, salt, and pepper. Spread in the baking dish and top with mozzarella.
- Prepare Stuffing: Mix stuffing with water and olive oil. Spread over chicken mixture and sprinkle with Parmesan.
- Bake: Bake for 30–35 minutes until golden and bubbly. Let it rest for 5 minutes before serving.
