Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Mix the Filling: In a large bowl, combine the shredded chicken, black beans, cooked rice, thawed corn, enchilada sauce, sour cream, salsa, ground cumin, chili powder, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Assemble First Layer: Place half of the tortilla strips evenly at the bottom of the prepared baking dish. Spread half of the chicken mixture over the tortilla base, then sprinkle with 1 cup of shredded Mexican blend cheese.
  4. Repeat Layers: Add the remaining tortilla strips on top of the first cheesy layer, followed by the rest of the chicken mixture. Top with the remaining 1 cup of cheese to create a thick, cheesy casserole.
