For the Chicken Dumpling Patties:

  • 1 pound ground chicken
  • 1/2 cup finely chopped green onions

  • 1 teaspoon rice vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 1/4 cup panko breadcrumbs

  • 4 burger buns

Instructions

  1. In a large mixing bowl, combine the ground chicken, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, salt, black pepper, white pepper (if using), breadcrumbs, and egg. Mix just until combined; do not overmix.
  2. Form into 4 equal-sized patties and refrigerate for 10–15 minutes to help them firm up.
  3. Heat vegetable oil in a skillet over medium heat. Cook the patties for 5–6 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
  4. Toast the burger buns if desired. Assemble each burger with a chicken dumpling patty and your choice of toppings like shredded cabbage, cucumber slices, hoisin sauce, or sriracha mayo. Serve warm.
