Description

This Chicken Fajita Rice Bowl is a delicious one-pan meal that combines tender chicken strips, colorful bell peppers, and flavorful fajita seasoning with rice, all cooked together for a flavorful and satisfying dish. Perfect for an easy weeknight dinner or meal prep option.

For the Chicken:

  • 1 pound boneless, skinless chicken breasts (cut into strips)
  • 2 tablespoons olive oil
  • 1 packet (about 1 oz) fajita seasoning

For the Rice and Vegetables:

  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small red onion (sliced)
  • 1 cup long-grain white rice (uncooked)
  • 2 1/4 cups chicken broth
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, shredded cheese, salsa


Instructions

  1. Cook the Chicken: Heat 1 tablespoon olive oil in a large skillet or pan over medium-high heat. Add the chicken strips and half of the fajita seasoning. Cook for 5–6 minutes until browned and cooked through. Set aside.
  2. Cook the Vegetables and Rice: In the same pan, add remaining olive oil, bell peppers, and onion. Sauté for 3–4 minutes. Add rice, fajita seasoning, and chicken broth. Bring to a boil, then cover and simmer for 18–20 minutes until rice is cooked.
  3. Combine and Serve: Return cooked chicken to the pan, stir to combine, and heat through. Remove from heat, drizzle with lime juice, sprinkle with cilantro. Add toppings as desired and serve warm.

Notes

  • To make it spicier, add jalapeños or cayenne pepper.
  • Brown rice can be used but requires more cooking time and liquid.
  • This dish stores well and is great for meal prep.
