For the Chicken:
- 4 boneless, skinless chicken thighs or breasts
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
For the Garlic Parmesan Rice:
- 3 tbsp butter (divided)
- 4 cloves garlic, minced
- 1 cup long grain white rice
- 2¼ cups low-sodium chicken broth
- ½ cup freshly grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Season the Chicken: Season both sides of the chicken with Italian seasoning, garlic powder, paprika, salt, and pepper.
- Cook the Chicken: In a skillet, cook the chicken in olive oil and butter until golden and cooked through. Set aside.
- Prepare the Rice: In the same pan, sauté garlic, then add rice and cook. Pour in chicken broth, simmer until rice is tender.
- Finish the Dish: Stir in Parmesan, return chicken to skillet, let rest, then serve garnished with parsley.

- You can use chicken thighs for a juicier alternative.
- Enhance the flavor with a squeeze of lemon juice.
