  • 1 cup semisweet chocolate chips
  • 1 cup mint chocolate chips or chopped Andes mints


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and extracts: Beat in the eggs, one at a time, then stir in the vanilla and peppermint extracts.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Mix the dough: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chocolate and mint chips.
  6. Bake: Drop rounded tablespoons of dough onto the baking sheets and bake for 9–11 minutes until the edges are set but centers are still soft.
  7. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense mint flavor, increase the peppermint extract to 1 1/2 teaspoons.
