- 1 tbsp Greek yogurt
- 1 tbsp honey or powdered sugar
- 1 tbsp milk (to thin, if needed)
Instructions
- Make the crepe batter: In a blender, combine oat flour, vanilla protein powder, milk, eggs, cinnamon, vanilla extract, Greek yogurt, and honey or maple syrup. Blend until the mixture is smooth and uniform. Allow the batter to rest for 5 minutes to improve texture.
- Cook the crepes: Heat a non-stick pan over medium heat. Pour a small amount of batter into the pan and quickly swirl it around to form a thin, even layer. Cook for 1 to 2 minutes until the edges start to lift and the bottom is lightly golden. Flip the crepe and cook the other side for an additional 1 to 2 minutes. Remove and set aside. Repeat with the remaining batter.
- Prepare the cinnamon filling: In a small bowl, combine Greek yogurt, honey or maple syrup, and cinnamon. Stir until well mixed and smooth.
- Make the cream cheese drizzle: In another bowl, whisk softened cream cheese with Greek yogurt, honey or powdered sugar, and milk until smooth and creamy. Add extra milk if needed to achieve a drizzle-friendly consistency.
- Assemble: Spread the cinnamon filling evenly over each crepe. Roll the crepes carefully to encase the filling. Drizzle the cream cheese topping generously over the rolled crepes. Serve immediately and enjoy.
