Salad Ingredients
- 4 cups romaine lettuce (chopped or preferred mix of greens)
- 2 cups chicken (cooked, sliced or diced)
- 6 pieces bacon (cooked and diced)
- 4 eggs (boiled, peeled and sliced)
- 1 large avocado (pitted and sliced or diced)
- 1 cup cherry tomatoes (halved)
- ¼ cup red onion (sliced)
Dressing Ingredients
- â…“ cup honey
- ¼ cup Dijon mustard
- 1 Tbsp Dijon mustard
- 3 Tbsp olive oil
- 3 Tbsp apple cider vinegar
- ½ tsp garlic powder
- ½ tsp kosher salt
- ¼ tsp ground black pepper
Instructions
- Make the dressing: Add all dressing ingredients — honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, kosher salt, and ground black pepper — into a small mixing bowl. Whisk thoroughly or place in a mason jar and shake until well combined. Taste and adjust seasoning as needed. Then set aside to let flavors meld.
- Prepare the salad ingredients: Slice the cooked chicken into bite-sized pieces. Peel and slice the boiled eggs. Wash and chop the romaine lettuce or your choice of greens. Halve the cherry tomatoes. Slice the red onion thinly. Dice or slice the avocado just before assembling to prevent browning.
- Assemble the salad: Place the chopped lettuce at the bottom of your serving bowl or plate. Neatly arrange the sliced chicken, diced bacon, boiled eggs, avocado, cherry tomatoes, and red onion on top of the lettuce in rows or sections to display the colorful ingredients. Pour the prepared dressing evenly over the salad and gently toss everything together until well coated.
- Serve: Serve the salad immediately after tossing to enjoy the fresh textures and flavors. This salad is ideal as a light lunch or a satisfying dinner with balanced protein and fresh produce.
Notes

- The dressing can be made ahead and refrigerated for up to 3 days.
- Customize the greens to include kale or spinach as preferred.
- For a lower sugar dressing, reduce honey amount slightly.
- Ensure bacon is cooked until crisp for optimal texture.
