Instructions

  1. Boil Water: Bring a large pot of water to a boil over high heat.
  2. Prepare Potatoes: Peel the potatoes and chop them into 1 or 2 inch pieces.
  3. Prepare Aromatics: Chop the onion and smash and mince the garlic. Fresh garlic is preferred, but jarred can be used if needed.
  4. Cook Potatoes and Aromatics: Add the potatoes, onions, and garlic to the boiling water. Bring back to a boil, then reduce heat to a simmer.
  5. Simmer: Cook for 15-20 minutes until the potatoes are very fork tender.
  6. Drain: Carefully drain the potatoes and aromatics using a lid or colander. Return them to the pot.
  7. Add Creamy Ingredients and Seasonings: Add the cream cheese, butter, chicken bouillon, and 1 teaspoon of seasoned salt.
  8. Whip: Use an electric mixer to whip the potatoes until ultra creamy, about 1-2 minutes. Scrape the sides and bottom with a spatula to ensure even mixing. Avoid over-mixing.
  9. Adjust Seasoning: Taste and add up to 1 more teaspoon of seasoned salt if desired.
  10. Garnish and Serve: Garnish with fresh parsley if desired for presentation before serving.
