Zucchini Fries
- 2 medium zucchinis
- 1/2 cup breadcrumbs (preferably panko for extra crispiness)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 2 large eggs
- Olive oil spray (or cooking spray)
Instructions
- Prepare the Zucchini: Wash and dry the zucchinis thoroughly. Cut off the ends, then slice each zucchini into 1/2-inch thick strips resembling fries.
- Prepare the Breading: In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper until combined evenly.
- Dunk in Egg: Beat the eggs in a separate shallow bowl. Dip each zucchini strip into the egg, coating it completely, then transfer it to the breadcrumb mixture. Press gently so the breadcrumbs stick well to each strip.
- Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure it’s ready for cooking.
- Air Fry the Zucchini Fries: Lightly spray the air fryer basket with olive oil or cooking spray. Place the breaded zucchini fries in a single layer in the basket, spacing them out so they cook evenly. Lightly spray the tops again with olive oil to encourage crispiness.
- Cook: Air fry the zucchini fries at 400°F (200°C) for 10 to 12 minutes. Halfway through cooking, shake the basket to turn them for even browning and crispness. Cook until they are golden brown and crispy.
- Serve: Remove the fries from the air fryer and serve immediately while hot. These pair excellently with marinara sauce or ranch dressing for dipping.
Notes
- For extra crispiness, use panko breadcrumbs rather than regular breadcrumbs.
- Be careful not to overcrowd the air fryer basket to allow proper air circulation for even cooking.
- If you don’t have an air fryer, you can bake these zucchini fries on a lined baking sheet at 425°F (220°C) for about 15-20 minutes, flipping halfway through.
- Serve immediately for the best texture as the fries can lose their crispness if left standing.
