Zucchini Fries

  • 2 medium zucchinis
  • 1/2 cup breadcrumbs (preferably panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Olive oil spray (or cooking spray)


Instructions

  1. Prepare the Zucchini: Wash and dry the zucchinis thoroughly. Cut off the ends, then slice each zucchini into 1/2-inch thick strips resembling fries.
  2. Prepare the Breading: In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper until combined evenly.
  3. Dunk in Egg: Beat the eggs in a separate shallow bowl. Dip each zucchini strip into the egg, coating it completely, then transfer it to the breadcrumb mixture. Press gently so the breadcrumbs stick well to each strip.
  4. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure it’s ready for cooking.
  5. Air Fry the Zucchini Fries: Lightly spray the air fryer basket with olive oil or cooking spray. Place the breaded zucchini fries in a single layer in the basket, spacing them out so they cook evenly. Lightly spray the tops again with olive oil to encourage crispiness.
  6. Cook: Air fry the zucchini fries at 400°F (200°C) for 10 to 12 minutes. Halfway through cooking, shake the basket to turn them for even browning and crispness. Cook until they are golden brown and crispy.
  7. Serve: Remove the fries from the air fryer and serve immediately while hot. These pair excellently with marinara sauce or ranch dressing for dipping.

Notes

  • For extra crispiness, use panko breadcrumbs rather than regular breadcrumbs.
  • Be careful not to overcrowd the air fryer basket to allow proper air circulation for even cooking.
  • If you don’t have an air fryer, you can bake these zucchini fries on a lined baking sheet at 425°F (220°C) for about 15-20 minutes, flipping halfway through.
