Ingredients
Scale
Vegetables
- 2 cucumbers
- 14 cherry tomatoes
Filling
- 4 ounces cream cheese (softened)
- 2 tablespoons mayonnaise
- 2 tablespoons ranch dressing
- 1 tablespoon fresh dill (chopped)
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon garlic salt
Garnish
- Fresh ground pepper (to taste)
Instructions
- Prepare the cucumbers: Wash, peel, and slice the cucumbers into ½ inch thick discs, discarding the ends to ensure uniform pieces.
- Scoop cucumber centers: Using a small measuring spoon, gently remove some of the center from each cucumber slice to create a small cavity for the filling.
- Mix the filling: In a medium mixing bowl, combine the softened cream cheese, mayonnaise, ranch dressing, Italian seasoning, and garlic salt. Stir vigorously until the mixture is smooth and well blended.
- Add fresh dill: Fold in the chopped fresh dill and mix until evenly combined throughout the filling.
- Fill the cucumber slices: Transfer the filling into a piping bag fitted with a star tip and pipe approximately 1 tablespoon of filling onto the center of each cucumber slice.
- Prepare cherry tomatoes: Slice each cherry tomato in half to create small topping pieces.
- Assemble bites: Place one half of a cherry tomato on top of the filling on each cucumber slice, pressing it lightly to secure.
- Garnish and serve: Sprinkle freshly ground pepper over the cucumber bites to taste and serve immediately for maximum freshness.
Notes
- For best flavor, chill the filling mixture for 15 minutes before assembling.
- Use a sharp knife to slice the cucumbers cleanly and prevent crushing.
- These bites are best served fresh but can be prepared up to 2 hours in advance and kept refrigerated.
- For a dairy-free version, substitute cream cheese and mayonnaise with vegan alternatives.
- Adjust garlic salt according to taste or substitute with fresh minced garlic for a stronger flavor.
