Description

These refreshing Cucumber Bites are a perfect no-cook appetizer featuring crisp cucumber slices filled with a creamy mixture of cream cheese, mayonnaise, ranch dressing, and fresh dill, topped with juicy cherry tomato halves and a sprinkle of fresh ground pepper.

Ingredients

Scale

Vegetables

  • 2 cucumbers
  • 14 cherry tomatoes

Filling

  • 4 ounces cream cheese (softened)
  • 2 tablespoons mayonnaise
  • 2 tablespoons ranch dressing
  • 1 tablespoon fresh dill (chopped)
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic salt

Garnish

  • Fresh ground pepper (to taste)

Instructions

  1. Prepare the cucumbers: Wash, peel, and slice the cucumbers into ½ inch thick discs, discarding the ends to ensure uniform pieces.
  2. Scoop cucumber centers: Using a small measuring spoon, gently remove some of the center from each cucumber slice to create a small cavity for the filling.
  3. Mix the filling: In a medium mixing bowl, combine the softened cream cheese, mayonnaise, ranch dressing, Italian seasoning, and garlic salt. Stir vigorously until the mixture is smooth and well blended.
  4. Add fresh dill: Fold in the chopped fresh dill and mix until evenly combined throughout the filling.
  5. Fill the cucumber slices: Transfer the filling into a piping bag fitted with a star tip and pipe approximately 1 tablespoon of filling onto the center of each cucumber slice.
  6. Prepare cherry tomatoes: Slice each cherry tomato in half to create small topping pieces.
  7. Assemble bites: Place one half of a cherry tomato on top of the filling on each cucumber slice, pressing it lightly to secure.
  8. Garnish and serve: Sprinkle freshly ground pepper over the cucumber bites to taste and serve immediately for maximum freshness.

Notes

  • For best flavor, chill the filling mixture for 15 minutes before assembling.
  • Use a sharp knife to slice the cucumbers cleanly and prevent crushing.
  • These bites are best served fresh but can be prepared up to 2 hours in advance and kept refrigerated.
  • For a dairy-free version, substitute cream cheese and mayonnaise with vegan alternatives.
  • Adjust garlic salt according to taste or substitute with fresh minced garlic for a stronger flavor.
