- 1 cup fresh dandelion petals (yellow parts only)
- 1 cup water
- 2 cups granulated sugar
- 1 tablespoon lemon juice
- Optional: 1–2 drops natural yellow food coloring
Instructions
- Rinse the dandelion petals: Gently rinse the dandelion petals, ensuring to remove any green parts or stems.
- Make floral infusion: In a small saucepan, simmer water and add the petals. Simmer for 10 minutes, then strain out the petals, keeping the liquid.
- Create syrup: Return the dandelion liquid to the saucepan. Add sugar and lemon juice, stirring until sugar dissolves. Bring to a gentle boil.
- Reach hard crack stage: Boil until the mixture reaches 300°F (150°C) on a candy thermometer.
- Add color and mold: Remove from heat, stir in food coloring (if desired), and pour into molds or onto a tray. Let cool and harden.
- Set and store: Once solid, remove candies from molds and store in an airtight container.
