  • 5 green onions (white and green parts separated, sliced)
  • 4 garlic cloves (minced)
  • 2 tbsp minced ginger
  • 1 cup shredded carrots

Dumplings & Garnish

  • 1-1½ lbs. frozen dumplings
  • Chili crisp (optional for topping)
  • Sesame seeds (optional for topping)


Instructions

  1. Prepare Miso Mixture: In a small bowl, combine ½ cup of chicken stock with the white miso paste, stirring until a smooth, uniform mixture forms without lumps.
  2. Sauté Aromatics: Heat the sesame oil in a dutch oven or large pot over medium-high heat. Add the white parts of the green onions, minced garlic, and minced ginger. Cook, stirring frequently, until fragrant and slightly softened, about 2-3 minutes.
  3. Add Broth and Carrots: Pour the remaining chicken stock along with the prepared miso mixture into the pot. Stir in the low sodium soy sauce and shredded carrots, ensuring everything is well combined.
  4. Simmer Vegetables: Bring the soup to a boil, then reduce heat to maintain a strong simmer. Cook until the carrots become tender, approximately 5 minutes.
  5. Cook Dumplings: Gently stir in the frozen dumplings, return the soup to a boil, then reduce back to a simmer. Cook for 4-5 minutes or until the dumplings are heated through and cooked completely.
  6. Finish Soup: Stir in the fresh lime juice and the green parts of the sliced green onions. Remove the pot from heat.
  7. Serve and Garnish: Ladle the soup into bowls. Top with additional sliced scallions, chili crisp, and sesame seeds if desired to add extra flavor and texture.
