Description

Chicken Marinade

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 1 ½ tablespoon fajita seasoning

Vegetables

  • 3 medium bell peppers, cored and sliced
  • 1 large onion, peeled, halved and thinly sliced

Other Ingredients

  • 3 tablespoons olive oil (for cooking)
  • 8 medium flour tortillas
  • Toppings of choice: salsa, sour cream, guacamole, etc.


Instructions

  1. Marinate the Chicken: Toss the chicken strips with 1 tablespoon of olive oil, lime juice, and fajita seasoning until well coated. Let it sit briefly to absorb the flavors.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and cook the chicken in two batches until fully cooked through and lightly charred on the outside, approximately 2-3 minutes per side. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté the Onions: In the same skillet, add more olive oil if needed, then add the sliced onions. Cook over medium-high heat until they are softened and lightly browned, about 4-5 minutes. Remove from skillet and set aside.
  4. Sauté the Peppers: Add the sliced bell peppers to the skillet and cook over medium-high heat until they reach your preferred tenderness, usually about 5-7 minutes.
  5. Combine and Heat Through: Return the cooked chicken and onions to the skillet with the peppers and toss everything together over medium-high heat for 30-60 seconds to heat through and blend the flavors.
  6. Serve: Warm the flour tortillas and serve immediately with the chicken and vegetable filling. Offer choice of toppings such as salsa, sour cream, and guacamole for customization.
