  • 1 ½ tablespoons taco seasoning (or more to taste)
  • 4 tablespoons water
  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese


Instructions

  1. Sauté Vegetables: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chopped red onion and cook until fully softened, about 3 minutes. Stir in the chopped green onion and red bell pepper and cook for an additional 1-2 minutes until vegetables are tender.
  2. Add Chicken Mixture: Stir in the shredded chicken, taco seasoning, and 4 tablespoons water. Cook the mixture for 2-3 minutes to allow the flavors to meld, then remove from heat.
  3. Assemble Quesadillas: Lay one flour tortilla flat and sprinkle 2 tablespoons of shredded cheese over one half. Top the cheese with a quarter of the chicken and vegetable mixture, then sprinkle another 2 tablespoons of cheese on top. Fold the tortilla over to enclose the filling and lightly brush the outside with olive oil.
