Ground Turkey Filling

  • 1 tsp Oregano
  • 1 tsp Chili Powder
  • 1 can Canned Diced Tomatoes (including juices)
  • 1 cup Zucchini, diced
  • 2 cups Spinach
  • 1 cup Black Beans (optional)
  • 1 cup Corn (optional)

Toppings

  • 1 cup Cheddar Cheese, shredded
  • 2 stalks Green Onions, sliced
  • 1 cup Salsa
  • 1 cup Greek Yogurt (for garnish)


Instructions

  1. Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork and place them on a baking sheet. Bake for 45-50 minutes until soft and tender when pierced with a fork. Remove from oven and let cool slightly.
  2. Cook the Ground Turkey: While the sweet potatoes bake, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add ground turkey and cook until browned, breaking it apart with a spoon.
