Ground Turkey Filling

- 1 tbsp Olive Oil

- 1 tsp Chili Powder
- 1 can Canned Diced Tomatoes (including juices)
- 1 cup Zucchini, diced
- 2 cups Spinach
- 1 cup Black Beans (optional)
- 1 cup Corn (optional)

- 1 cup Cheddar Cheese, shredded
- 2 stalks Green Onions, sliced
- 1 cup Salsa
- 1 cup Greek Yogurt (for garnish)
Instructions
- Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork and place them on a baking sheet. Bake for 45-50 minutes until soft and tender when pierced with a fork. Remove from oven and let cool slightly.
- Cook the Ground Turkey: While the sweet potatoes bake, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add ground turkey and cook until browned, breaking it apart with a spoon.
- Season the Meat: Stir in ground cumin, paprika, oregano, and chili powder. Cook for 2 minutes to allow spices to bloom and flavor to develop.
