  • 2 cups frozen mixed vegetables
  • 2 medium potatoes (peeled and diced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon tomato paste (optional)


Instructions

  1. Heat Olive Oil: Heat olive oil in a large pot over medium heat.

  3. Add Onion and Garlic: Sauté diced onion and minced garlic until softened.
