- 2 cups frozen mixed vegetables
- 2 medium potatoes (peeled and diced)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon tomato paste (optional)
Instructions
- Heat Olive Oil: Heat olive oil in a large pot over medium heat.
- Cook Ground Beef: Add the ground beef and cook until browned, breaking it up with a spoon.
- Add Onion and Garlic: Sauté diced onion and minced garlic until softened.
- Add Remaining Ingredients: Stir in broth, tomatoes, vegetables, potatoes, seasonings, and tomato paste (if using).
