Description

Fasolakia is a classic Greek dish of tender green beans simmered slowly with tomatoes, potatoes, garlic, and aromatic herbs. This vegan and gluten-free Mediterranean side dish is cooked stovetop to tender perfection, allowing fresh flavors to meld and create a comforting, healthy meal perfect alongside grilled meats or feta cheese.

  • 1 1/2 pounds green beans, trimmed
  • 1/4 cup olive oil
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 medium ripe tomatoes, chopped (or 1 can diced tomatoes, drained)
  • 1/2 cup water
  • 2 medium potatoes, peeled and cut into chunks (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil and sauté onions: In a large pot or deep skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 4 to 5 minutes until softened and translucent.
  2. Add garlic: Stir in the minced garlic and cook for another minute, allowing the garlic to become fragrant without burning.
  3. Add green beans and other ingredients: Incorporate the trimmed green beans, chopped tomatoes, water, and potatoes if using. Sprinkle in the dried oregano, salt, and black pepper. Stir everything together to combine evenly.
  4. Simmer the mixture: Cover the pot with a lid and reduce heat to low. Let the beans and potatoes simmer gently for 40 to 45 minutes, stirring occasionally, until the vegetables are tender and most of the liquid has evaporated.
  5. Adjust seasoning and garnish: Taste the dish and adjust salt or pepper if necessary. Garnish with freshly chopped parsley before serving warm or at room temperature.

Notes

  • Use fresh summer tomatoes for a more authentic taste, and optionally add a dash of cinnamon for warmth.
