Description

Puff Pastry:

  • 1 sheet puff pastry (thawed)

Goat Cheese Mixture:

  • 4 ounces goat cheese (softened)
  • 3 tablespoons fig jam
  • 1 teaspoon fresh rosemary or thyme (finely chopped)
  • 1 egg (beaten, for egg wash)
  • 1 tablespoon chopped walnuts or pecans (optional)
  • Pinch of salt and black pepper


Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Pastry: On a lightly floured surface, unroll the puff pastry sheet. Spread fig jam over the pastry, then add goat cheese, herbs, nuts, salt, and pepper.
  3. Roll and Cut: Roll the pastry into a log, slice into pinwheels, and place on the baking sheet.
  4. Bake: Brush the pinwheels with egg wash and bake for 15–18 minutes until golden brown.

Notes

  • These can be made ahead and frozen before baking—just slice, freeze on a tray, and transfer to a sealed bag. Bake straight from frozen, adding a couple of extra minutes to the bake time.
