Description

These fluffy and fruity baked strawberry cake donuts are a delightful treat perfect for breakfast or dessert. Made with fresh strawberries and a light vanilla-infused batter, they’re baked to perfection and topped with a luscious strawberry glaze. Easy to prepare and perfectly portioned, these donuts offer a moist texture with bursts of strawberry flavor in every bite.

Ingredients

Scale

Donut Batter

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tbsp unsalted butter, melted (or neutral oil)
  • 1 tsp vanilla extract
  • ½ cup chopped fresh strawberries

Strawberry Glaze

  • 1 cup powdered sugar
  • 1–2 tbsp strawberry puree (from about 2–3 strawberries)
  • ½–1 tbsp milk, if needed for consistency
  • A pinch of salt (optional)

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350°F (175°C). Grease a 6-cavity donut pan thoroughly to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Combine wet ingredients and strawberries: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract. Then stir in the chopped fresh strawberries to distribute them evenly.
  4. Combine wet and dry mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing to maintain a light, fluffy texture.
  5. Fill the donut pan: Spoon or pipe the batter into the prepared donut pan cavities, filling each about three-quarters full to allow room for rising.
  6. Bake the donuts: Bake in the preheated oven for 10–12 minutes, or until a toothpick inserted into the donuts comes out clean, indicating they are fully cooked.
  7. Cool donuts: Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. Prepare the glaze: Puree fresh strawberries using a blender or food processor. In a bowl, mix the strawberry puree with powdered sugar and milk until smooth. Add a pinch of salt if desired to balance the flavor.
  9. Glaze the donuts: Dip the cooled donuts into the strawberry glaze, ensuring an even coating. Allow the glaze to set on the wire rack before serving.
  10. Serve or store: Serve the donuts immediately for the best texture and flavor. Alternatively, store them in an airtight container to maintain freshness.

Notes

  • Use fresh ripe strawberries for the best flavor and natural sweetness.
  • You can substitute milk with almond, soy, or oat milk to make the recipe dairy-free.
  • If you prefer, replace unsalted butter with neutral oils like vegetable or canola oil.
  • Do not overmix the batter to keep the donuts tender and airy.
  • These donuts are best enjoyed fresh but can be stored for up to 2 days in an airtight container at room temperature.
  • Make sure the donuts are fully cooled before glazing to prevent the glaze from melting.
