Cake Batter

  • 2 large eggs, at room temperature
  • 1/2 cup peanut butter (spread or pure)
  • 1/4 cup oil (canola or vegetable)
  • 2/3 cup milk (or water)
  • 1/3 cup honey or maple syrup (or apple sauce; optional, can skip)
  • 2 1/2 cups grated carrot (about 2 large carrots, peeled)
  • 2 cups flour, plain/all-purpose (or whole wheat/wholemeal flour)
  • 2 1/2 tsp baking soda (or substitute 6 tsp baking powder)

Potato Layer

  • 1 kg / 2 lb potatoes, peeled and cut into chunks
  • 3/4 – 1 cup plain unsweetened yoghurt (or water)
  • Water or milk as needed to adjust consistency

Drip Icing

  • Blue food colouring gel or liquid (or other color of choice)
  • 1/2 cup cornflour/cornstarch
  • 1/4 cup plain unsweetened yoghurt
  • 1 – 2 tbsp milk, as needed

Decorations

  • Silver, blue, and white edible balls
  • Candles
  • Birthday sign


Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the eggs, peanut butter, oil, milk, and honey or maple syrup until smooth. Fold in the grated carrots, flour, and baking soda to create a thick, even batter.
  2. Bake the Cake Layers: Divide the batter evenly into four greased cake pans. Bake for about 30-40 minutes or until a toothpick inserted into the center comes out clean. Allow the layers to cool completely before assembling.
  3. Prepare the Potato Layer: Boil the peeled potatoes in water until tender, about 15-20 minutes. Drain well and mash with yoghurt, adding milk or water as needed to reach a smooth, spreadable consistency. This will act as a creamy, dog-friendly layer between the cake layers.
  4. Make the Drip Icing: Mix the cornflour with yoghurt and milk to form a thick paste. Add blue food colouring until the desired shade is reached. The mixture should be thick enough to drip slowly down the sides of the cake.
  5. Assemble the Cake: Place the first cake layer on a serving plate, spread a layer of mashed potatoes on top. Repeat with remaining layers, finishing with a cake layer on top. Pour the coloured drip icing over the top of the cake allowing it to drip down the sides naturally.
  6. Decorate: Garnish the cake with silver, blue, and white edible balls, place candles, and a birthday sign as desired. Keep the cake refrigerated until serving.
