For the Burritos:

  • 8 large flour tortillas
  • 10 large eggs
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 1 cup breakfast sausage (crumbled and cooked) or bacon bits
  • 1 cup frozen diced hash browns (cooked)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • foil or parchment paper for wrapping


Instructions

  1. Sauté Vegetables: In a large skillet over medium heat, heat olive oil and sauté the diced bell peppers and onions until soft, about 5 minutes.
  2. Add Fillings: Stir in the cooked sausage and hash browns to warm through.
  3. Prepare Eggs: In a large bowl, whisk together the eggs, milk, salt, and pepper. Pour the eggs into the skillet and cook, stirring frequently, until scrambled and fully cooked.
  4. Assemble Burritos: Remove from heat and allow the filling to cool slightly. Lay out the tortillas and divide the egg mixture evenly among them. Sprinkle shredded cheese on top. Roll each tortilla into a burrito, folding in the sides as you go.
  5. Freeze: Wrap each burrito tightly in foil or parchment paper. Place them in a freezer-safe bag or container and freeze.

Notes

  • To reheat, unwrap and microwave a frozen burrito for 2–3 minutes or until heated through.
  • You can also bake in a 350°F oven for 20–25 minutes.
