- 1½ cups cherry tomatoes, quartered
- 8 oz fresh mozzarella, torn or sliced
- ½ large red onion, chopped
Dressing
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Salt and pepper to taste
Instructions
- Prepare the dressing: In a mixing bowl, whisk together the olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper until well combined, creating a flavorful herb vinaigrette.
- Prepare the vegetables: Peel the cucumber, fork-score it lightly to enhance texture, and dice it. Quarter the cherry tomatoes and chop the red onion into small pieces to ensure balanced bites throughout the salad.
- Combine salad ingredients: Add the diced cucumber, quartered cherry tomatoes, and chopped red onion into the bowl with the dressing. Tear or slice the fresh mozzarella into bite-sized pieces and add it as well.
- Toss the salad: Gently toss all the ingredients together until each piece is evenly coated with the dressing, allowing the flavors to meld.
- Serve: Serve the salad immediately, either chilled or at room temperature for the best freshness and flavor.
Notes
- For extra freshness, chill the cucumbers before preparing the salad.
- Use fresh mozzarella for the best texture and creaminess.
- Adjust salt and pepper according to your taste preference.
- Can be garnished with fresh basil leaves for added aroma and color.
- Best consumed the day it is made to retain crispness of vegetables.
