Description

Fruity Pebbles Sushi is a fun and colorful no-bake dessert that combines the chewy sweetness of marshmallows and cream cheese with the crunchy texture of Fruity Pebbles and crispy rice cereal. Inspired by sushi rolls, this treat is rolled up with a fruit roll-up and then coated in extra Fruity Pebbles for a delightful crunch—a perfect snack or party treat for kids and adults alike.

Ingredients

Scale

Main Ingredients

  • 3 cups marshmallows
  • 2 tbsp butter
  • 2 cups crispy rice cereal
  • ½ cup Fruity Pebbles cereal
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 large fruit roll-up
  • ½ cup Fruity Pebbles (for coating)

Instructions

  1. Melt Marshmallows: In a saucepan, melt butter over low heat. Add marshmallows and stir continuously until the mixture is smooth and fully melted.
  2. Combine Cereals: Remove the saucepan from heat and fold in the crispy rice cereal along with ½ cup Fruity Pebbles. Stir thoroughly to ensure even coating.
  3. Form Base Layer: Press the sticky cereal mixture into a flat rectangular shape onto a piece of wax paper. Allow it to cool slightly, so it firms up but remains pliable.
  4. Prepare Cream Cheese Mixture: In a separate bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  5. Assemble Layers: Spread the cream cheese mixture evenly over the cooled cereal base. Then place the large fruit roll-up on top of the cream cheese layer.
  6. Roll Like Sushi: Using the wax paper to guide and help shape, carefully roll the layered dessert into a tight log, mimicking a sushi roll.
  7. Slice and Coat: Slice the roll into sushi-like pieces. Roll each slice in the remaining ½ cup Fruity Pebbles to coat the outsides, adding extra crunch and color.

Notes

  • Use wax paper or parchment paper to prevent sticking when forming and rolling the mixture.
  • Press the cereal mixture firmly to help it hold together better during rolling and slicing.
  • Softened cream cheese spreads more easily—take it out of the fridge in advance.
  • For a more vibrant appearance, use multi-colored Fruity Pebbles both inside and outside the roll.
  • Keep refrigerated if not serving immediately to maintain firmness.
