Description

This delicious Garlic Butter Chicken and Potatoes Skillet Delight is a hearty and flavorful one-pan meal featuring tender chicken breasts seared to perfection in rich garlic butter alongside golden, crispy potatoes. Perfect for a satisfying family dinner, this recipe combines simple ingredients with straightforward cooking to create a comforting dish that’s bursting with buttery, garlicky goodness and fresh parsley finish.

Ingredients

Scale

Chicken

  • 4 pieces Chicken Breasts (substitute with chicken thighs for juicier texture)
  • 4 cloves Garlic, minced or crushed
  • 3 tablespoons Butter
  • Salt and pepper to taste

Potatoes

  • 4 medium Potatoes (Yukon Gold or Russet, diced)

Garnish

  • 1/4 cup Fresh Parsley, chopped

Instructions

  1. Prepare the skillet and butter: Place a large skillet over medium heat and add 3 tablespoons of butter. Allow it to melt and bubble gently for about 2 minutes, which helps develop flavor and prepares for searing the chicken.
  2. Cook the chicken: Season chicken breasts with salt and pepper. Add chicken breasts carefully to the skillet and sear each side for 6 to 7 minutes until the exterior is golden brown and the internal temperature reaches 165°F. Remove the chicken from the skillet, transfer to a plate, and cover loosely with foil to keep warm.
  3. Cook the potatoes: In the same skillet, add diced potatoes. Stir occasionally and cook for 15 to 20 minutes until the potatoes are golden brown on the outside and tender inside.
  4. Reheat chicken with pan juices: Return the cooked chicken breasts to the skillet on top of the potatoes. Spoon some of the pan juices over the chicken and cook for an additional 2 to 3 minutes to reheat and blend flavors.
  5. Garnish and serve: Transfer the chicken and potatoes to a serving platter. Sprinkle freshly chopped parsley over the top for a fresh, vibrant finish. Serve immediately while hot.

Notes

  • Substituting chicken thighs will add extra juiciness and flavor due to higher fat content.
  • Use Yukon Gold potatoes for a buttery texture and Russet for a crispier exterior.
  • Ensure chicken reaches an internal temperature of 165°F for safe consumption.
  • Fresh garlic is preferable for best flavor.
  • Adjust seasoning with salt and pepper to your taste preferences.
