Scale
Main Ingredients
- 4 ½ cups vanilla ice cream
- 1/3 cup crème de menthe
- 1/3 cup crème de cocoa
- 10-15 ice cubes
- 10 Andes mints, broken into pieces
For Chocolate Rim
- 3-4 ounces bar chocolate, broken into pieces
- ½ cup vanilla ice cream
Garnishes
- Whipped cream
- Chocolate syrup
- Shavings from an Andes mint
Instructions
- Prepare the chocolate for the rim: Place 3 ounces of broken bar chocolate into a small bowl.
- Melt the ice cream: Add ½ cup of vanilla ice cream to a small bowl and microwave until melted and bubbling, about 30-45 seconds.
- Melt the chocolate: Pour the melted ice cream over the chocolate and let it sit for 1-2 minutes until the chocolate begins to soften.
- Stir to smooth: Stir the chocolate and ice cream mixture until completely smooth and glossy.
- Coat the glass rim: Dip the rim of a large wine glass into the melted chocolate mixture, letting excess drip off. Invert the glass and set it aside for 15 minutes to allow the chocolate to harden and set.
- Blend the drink: In a blender, combine 4 cups of vanilla ice cream, crème de menthe, crème de cocoa, broken Andes mints, and 10 ice cubes.
- Process until smooth: Blend on high speed until the mixture is smooth and frothy. Add additional ice cubes as needed if the mixture is too thin.
- Serve: Pour the blended mixture into the prepared, chocolate-rimmed glasses.
- Garnish: Top each glass with whipped cream, drizzle with chocolate syrup, and sprinkle shavings from an Andes mint.
- Enjoy: Serve immediately and enjoy this cool, minty dessert cocktail.
Notes
- To ensure a smooth chocolate rim, use good quality bar chocolate for melting.
- If you don’t have a microwave, gently melt the ice cream on the stove using a double boiler method.
- You can adjust the amount of crème de menthe for stronger or milder mint flavor.
- Use fresh ice for a thicker, frosty texture in the blended drink.
- This recipe is best served immediately to enjoy the freshness and texture.
