Description

This vibrant Greek Chicken Bowl recipe features tender marinated chicken cooked to perfection in an air fryer, served over a bed of fluffy rice or quinoa, and topped with fresh grape tomatoes, cucumber, crisp romaine lettuce, and a homemade tzatziki sauce. It’s a healthy, flavorful meal that’s quick to prepare and perfect for a nutritious weeknight dinner.

Ingredients

Scale

Chicken Marinade

  • 4 small chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Base and Vegetables

  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber (about 1 small cucumber, grated and squeezed of excess water)
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1 teaspoon fresh dill, chopped (or 1/2 teaspoon dried dill)

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes until well combined.
  2. Marinate the Chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking. Place them in the marinade and let them soak for at least 30 minutes, allowing the flavors to penetrate the meat.
  3. Make the Tzatziki Sauce: While the chicken marinates, prepare the tzatziki by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, salt, and dill. Stir well and refrigerate until ready to use.
  4. Cook the Chicken: Preheat the air fryer to 380°F (193°C). Place the marinated chicken breasts in the air fryer basket in a single layer. Cook for approximately 10 minutes or until the internal temperature reaches 165°F (74°C), flipping halfway through for even cooking.
  5. Assemble the Bowls: Begin by layering cooked rice or quinoa at the bottom of each bowl. Top with sliced air-fried chicken breasts, halved grape tomatoes, diced cucumber, and shredded romaine lettuce. Drizzle generously with the homemade tzatziki sauce before serving.

Notes

  • For best results, marinate the chicken for at least 30 minutes, but up to 2 hours for more flavor.
  • If you don’t have an air fryer, you can grill or pan-sear the chicken instead.
  • Use low-fat Greek yogurt for a lighter tzatziki sauce.
  • Feel free to substitute quinoa for rice to add more protein and fiber.
  • The tzatziki can be made a day ahead and stored in the refrigerator to deepen the flavors.
