For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt

For the Wraps:

  • 4 large flour tortillas
  • 1 ripe avocado (sliced)
  • 1 cup shredded lettuce
  • 1 medium tomato (diced)
  • ¼ cup red onion (thinly sliced)
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ¼ cup ranch or chipotle mayo
  • Optional lime wedges for serving


Instructions

  1. Preheat the Grill: Preheat a grill or grill pan over medium-high heat.
  2. Season and Grill the Chicken: Rub the chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper. Grill for about 5 to 6 minutes per side, or until fully cooked and internal temperature reaches 165°F. Let rest for 5 minutes, then slice thinly.
  3. Prepare the Wraps: Warm the tortillas. Spread a spoonful of ranch or chipotle mayo on each tortilla. Layer with lettuce, grilled chicken, avocado, tomato, red onion, and cheese. Roll up tightly, folding in the sides. Slice in half if desired.
  4. Serve: Serve immediately with lime wedges on the side.
