Ingredients
Scale
Potatoes
- 1 pound baby potatoes
Seasoning Mixture
- 3 tablespoons melted butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried oregano
For Serving
- Chopped fresh parsley (to taste)
Instructions
- Preheat the Grill: Heat your grill to medium-high heat to ensure it’s hot enough to cook the potatoes evenly without burning the foil.
- Prepare the Seasoning Mix: In a bowl, combine the melted butter, garlic powder, sea salt, paprika, ground black pepper, and dried oregano, mixing well to form a flavorful butter mixture.
- Toss the Potatoes: Place the baby potatoes on a large piece of aluminum foil. Pour the butter mixture over them and toss gently to coat all potatoes thoroughly. Arrange them cut side down on the foil.
- Seal the Foil Packet: Fold the sides of the aluminum foil towards the center, sealing the edges tightly to create a packet that traps steam and flavor.
- Grill the Potatoes: Place the foil packet on the preheated grill. Cook for 15 minutes, then carefully open the packet and flip all the potatoes to ensure even cooking. Reseal the packet and grill for an additional 10 minutes.
- Serve: Remove the potato packet from the grill. Open carefully, toss potatoes with chopped fresh parsley, and serve immediately for the best taste and texture.
Notes
- You can add other herbs like rosemary or thyme for additional flavor.
- Use baby potatoes as they cook more evenly and quickly on the grill.
- If you prefer spicier potatoes, add a pinch of cayenne pepper or chili flakes.
- Make sure to seal the foil packet properly to avoid steam escaping and drying out the potatoes.
- Serve with sour cream or your favorite dipping sauce for an extra tasty touch.
