Description

Delicious grilled marinated shrimp featuring a zesty blend of olive oil, fresh parsley, lemon juice, and a touch of heat from hot pepper sauce. Perfectly grilled to a tender, flavorful finish, this recipe is ideal for a quick, healthy, and satisfying seafood meal.

Ingredients

Scale

Marinade

  • 1 cup olive oil
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tbsp hot pepper sauce
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • 2 tsp dried oregano
  • 1 tsp salt (or to taste)
  • 1 tsp ground black pepper (or to taste)

Main

  • 2 lbs large shrimp, peeled and deveined, tails on
  • 6 skewers (wooden or metal)

Instructions

  1. Make the Marinade: In a bowl, whisk together olive oil, chopped fresh parsley, lemon juice, hot pepper sauce, minced garlic, tomato paste, dried oregano, salt, and ground black pepper until well combined.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to infuse, up to a maximum of 2 hours for more intense flavor.
  3. Prep the Grill: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat to ensure a perfect sear.
  4. Skewer & Grill: Thread the marinated shrimp onto the skewers. Place the skewers on the hot grill and cook for 2 to 3 minutes on each side until the shrimp turn pink and develop a slight char, indicating they are cooked through.
  5. Serve Hot: Remove the shrimp skewers from the grill and serve immediately. They are excellent with lemon wedges or paired with salad, rice, or pasta for a complete meal.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • Marinating shrimp for up to 2 hours intensifies the flavor but avoid longer to prevent the seafood from becoming mushy.
  • Ensure shrimp are not overcooked to maintain tenderness; pink and slightly charred is ideal.
  • Can be served with various sides like grilled vegetables, rice, or pasta for versatility.
  • Use metal skewers as an alternative to wooden ones.
