  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped macadamia nuts (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large mixing bowl, combine mashed bananas, crushed pineapple, coconut, eggs, oil, sugars, and vanilla.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to wet ingredients and stir until just combined. Fold in macadamia nuts.
  5. Bake: Pour batter into loaf pan and bake for 55–65 minutes until a toothpick inserted comes out clean.
  6. Cool and serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
