  • 3 cups beef broth
  • 1 can (15 oz) diced tomatoes with juice
  • 1 can (15 oz) sweet corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)

Seasonings

  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste


Instructions

  1. Brown the beef and sauté aromatics: In a skillet over medium heat, heat the olive oil and brown the ground beef until fully cooked. Drain excess fat. Add the diced onion and minced garlic to the skillet and cook for 2–3 minutes until softened.
  2. Combine ingredients in the crockpot: Transfer the beef mixture to the crockpot. Add beef broth, diced tomatoes, corn, pinto beans, kidney beans, diced tomatoes with green chilies (Rotel), frozen mixed vegetables, diced potatoes, chili powder, paprika, Italian seasoning, salt, and black pepper. Stir gently to combine all ingredients evenly.
  3. Cook the soup: Cover the crockpot and cook on low for 6–8 hours or on high for 3–4 hours, until the potatoes are tender and the flavors have melded together.
  4. Final adjustments and serving: Before serving, stir the soup well. Taste and adjust seasoning with more salt or pepper if needed. Serve hot with cornbread or crusty bread for a full meal.
