Description

These homemade chicken nuggets are crispy, flavorful, and easy to make from scratch using simple ingredients. Ground chicken breast is seasoned with a blend of spices, then coated in flour, egg, and breadcrumbs before being fried to golden perfection. Perfect as a snack or a family meal, these chicken nuggets offer a delicious homemade alternative to store-bought versions.

Ingredients

Scale

Chicken Mixture

  • 1 – 1 1/4 pounds chicken breast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 cup cornstarch
  • 1/4 cup water

Coating

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup plain breadcrumbs

Frying

  • 3 – 4 cups vegetable oil (or more as needed)

Instructions

  1. Prepare Chicken Mixture: Place the chicken breast in a food processor and blend until minced. Add onion powder, garlic powder, black pepper, paprika, salt, sugar, cornstarch, and water. Process until all ingredients are well combined and the mixture is smooth.
  2. Shape and Freeze Nuggets: Using a 1 1/2 tablespoon measure, shape the chicken mixture into rectangular nuggets. Place the formed nuggets on a baking tray lined with parchment paper. Freeze the nuggets for 30 minutes to firm up for easier coating and frying.
  3. Heat Oil: Pour 3 to 4 cups of vegetable oil into a frying pan or deep fryer. Heat the oil over medium heat until it reaches approximately 350°F (175°C), suitable for frying.
  4. Coat Nuggets: Dredge each nugget first in all-purpose flour to cover completely, then dip into beaten eggs, and finally coat thoroughly with plain breadcrumbs. Ensure even coating for the best crispiness.
  5. Fry Nuggets: Fry the nuggets in batches if necessary, carefully placing them into hot oil. Cook for about 6 to 8 minutes until golden brown, flipping halfway through if using a pan to ensure even cooking. Nuggets should reach an internal temperature of 165°F (74°C) for safe consumption.
  6. Drain Excess Oil: Remove the cooked nuggets with a slotted spoon and place them onto a paper towel-lined plate or tray. Let them rest briefly to absorb excess oil before serving.

Notes

  • Freezing the nuggets before frying helps them hold their shape and creates a crispier coating.
  • Use a thermometer to monitor oil temperature to avoid greasy or undercooked nuggets.
  • For a healthier option, consider baking the nuggets at 400°F (204°C) for 15-20 minutes, turning halfway.
  • Ensure nuggets reach an internal temperature of 165°F (74°C) for food safety.
  • Breadcrumbs can be seasoned for extra flavor, such as with dried herbs or parmesan cheese.
