Instructions
- Puree Crackers: Process the graham crackers in a food processor until they become fine crumbs, which adds a subtle crunch and texture to the peanut butter filling.
- Make Peanut Butter Layer: In a large bowl, mix the creamy peanut butter, powdered sugar, graham cracker crumbs, vanilla extract, and salt (if using) until well combined, forming a smooth, thick filling.
- Make Chocolate Layer: Place the chocolate chips in a medium-sized microwave-safe bowl. Melt the chocolate in the microwave for 2 minutes, stirring every 30 seconds to ensure it melts evenly and doesn’t burn.
- Fill Muffin Cups: Line a 12-cup muffin tray with cupcake liners. Add about ½ tablespoon of melted chocolate to the bottom of each liner and spread it to cover completely.
