Sweet Potato

  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 2 tbsp olive oil

Beef

  • 1 lb (450g) lean ground beef
  • 1 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • Salt and pepper to taste

Hot Honey Sauce

  • ¼ cup honey
  • 1 tsp chili flakes (adjust to taste)

Optional Toppings

  • Fresh cilantro, chopped
  • 1 avocado, sliced


Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for roasting the sweet potatoes.
  2. Roast sweet potatoes: Toss the diced sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet. Roast in the oven for 25-30 minutes until tender and easily pierced with a fork.
  3. Cook the beef: While the sweet potatoes roast, heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Add the ground beef seasoned with minced garlic, salt, and pepper. Cook the beef for 5-7 minutes until browned and cooked through, breaking it apart as it cooks.
  4. Make the hot honey sauce: In a small bowl, combine the honey and chili flakes, mixing them well to create the sweet and spicy sauce.
  5. Combine ingredients: Once the sweet potatoes are roasted, add them to the skillet with the cooked beef. Drizzle the hot honey sauce over the mixture and gently toss everything together until the sweet potatoes and beef are evenly coated with the sauce.
